Whole Wheat Banana Bread

Ingredients

  • 1/3 cup melted coconut oil

  • 1/2 cup honey

  • 2 eggs

  • 2 large mashed bananas

  • 1/4 cup milk

  • 1 teaspoon baking soda

  • 1 teaspoon vanilla extract

  • 1 and 3/4 cups whole wheat flour

Instructions

  • Preheat oven to 325 degrees F and grease a 9x5 inch loaf pan

  • Mix the oil, honey, eggs, mashed bananas, and milk together in a large bowl with a whisk

  • Mix in the baking soda, vanilla, and salt

  • Pour the batter into the greased loaf pan

  • Bake for 55-60 minutes

  • Let cool on a wire rack and enjoy!

Sweet Potato Brownies

Ingredients

  • 2 large sweet potatoes

  • 2 tablespoons melted coconut oil

  • 3/4 cup honey

  • 1 1/2 teaspoons vanilla extract

  • 2 large eggs

  • 1 cup whole wheat flour

  • 1/3 unsweetened cocoa powder

  • 1 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1/2 cup semi-sweet chocolate chips

Instructions

  • Preheat oven to 350 degrees F and line an 8x8 inch baking pan with parchment paper

  • Microwave the sweet potatoes for 7 minutes on high until soft; once cool, peel off skins

  • Mix the coconut oil, honey, vanilla extract, and eggs together

  • In another bowl, mix the flour, cocoa powder, baking powder, and salt

  • Combine all the ingredients in the large bowl and mix in the chocolate chips

  • Pour the batter into the baking pan

  • Bake for 25-30 minutes

  • Place on a wire rack until cool and enjoy!

Strawberry Shortcake

Ingredients

  • 5 cups fresh strawberries

  • 2 tablespoons sugar

  • 1 1/3 cups whole wheat flour

  • 1 teaspoon baking powder

  • A pinch of salt

  • 1/2 cup milk

  • 1/2 cup honey

  • 1/3 cup melted coconut oil

  • 1 teaspoon vanilla extract

  • 2 large eggs

  • Whipped cream

Instructions

  • Preheat oven to 350 degrees F and grease an 8x8 inch baking pan

  • Toss the strawberries in a bowl with the sugar and set in refrigerator while prepping the rest

  • In a large bowl, mix the flour, baking powder, and salt

  • In another bowl, mix the milk, honey, oil, vanilla, and eggs

  • Combine all ingredients in the large bowl

  • Pour the batter into the baking pan

  • Bake for 20-25 minutes

  • Allow the cake to cool and enjoy!
